Our vineyards
The oldest vineyards - about 40/50 years old - are grown as "Apulian alberello" (free standing bush), an ancient technique that leads to very low production of grapes per hectare but of great concentration, in which the vine is free to develop towards the other, without constraints or ties, and where the leaves form a sort of umbrella that protects the fruits from direct contact with the sun.

Soil
The land of the area have to deal with a layer of outcropping rock. Stones and fossils force the roots of the vine into a very hard struggle that takes place underground in search of what the plant needs to survive. The color of the soil is in some places red like fire due to the notable presence of iron and minerals.
Climate
In Salento the winters are mild, but the summers are hot. The intense light of the daytime hours during the harvest period subjects the plant to crazy water stress. But you know, without great sacrifices you never reach great goals, and all this gives us grapes of incredible concentration, sweet, fragrant, mineral. Fortunately, the night comes to refresh the air by means of breezes that blow from the nearby sea.
Vineyards and their management
Our Primitivo, Negroamaro and Black Malvasia vines have covered our lands for millennia.
Continuous monitoring of the vineyards is essential for obtaining great grapes and allows for a totally organic management of the crops. Enlightened by this conviction, we employ agronomists and experts who carry out continuous analyzes of the soil, leaves, grapes, musts and wines.
Vinification
To transform grapes into wine we rely on the expertise of a valid winemaker, but this is not enough. The precious “know-how” of our professionals is supported by the latest generation of winemaking equipment, which allows temperature control in the various phases and respect for the fruit.
