We are in Salento, in the extreme south of Puglia, a strip of Italy pampered by two seas, the Ionian and the Adriatic. Land of so much history and so much beauty, sometimes harsh, poor and rich at the same time. 

Land enlighted by a hot and overpowering sun, which dries up the fields, red-hot the stone and burns the leaves ... but which, magically, gives black, concentrated, very sweet grapes.
